Ham & Mushroom Fettuccine

Fettuccine with Ham and MushroomMerrily, Merrily, I move along. I have been hit with the Christmas spirit. I could not get Christmas Carols out of my head yesterday, so I just sang them all day long. This left me in quite a good mood. Then my husband took me to see Catching Fire last night. Date night, always a blast. No kids, no cooking and a great dating partner. Plus, we both really liked the movie, so that always helps.

Anyways, does any of that have anything to do with the recipe. Nope, not one iota. I made this on Monday night, and it was a hit. The whole family loved it, and even went back for seconds. For some reason when I cook pasta, it never looks like enough going into the pot, so I add more. Then I have pasta for a basketball team. Okay not that much, but we always have plenty of pasta, lots of room for seconds. I will try to abstain from adding more pasta in the future!

  • 1 Pound dry fettuccine
  • 1/4 cup butter
  • 1/2 cup diced onions
  • 3 cloves garlic, minced
  • 1 pound fresh sliced mushrooms
  • 2 tsp. dried oregano
  • 2 tsp. dried basil
  • 2 tsp. dried parsley
  • 6 slices deli ham, chopped
  • 1 1/2 cups whipping cream
  • 1 cup spaghetti sauce
  • 1 tsp. cayenne pepper ( I only used 1/4 teaspoon)

1. Cook pasta until you reached desired tenderness. Drain.

2. Melt butter in large skillet. Cook onions and garlic until onion is tender. Add mushrooms, oregano, basil and parsley. Cook until mushrooms are tender, add ham. Cook 4 minutes.

3. Stir in whipping cream and bring to a boil, add spaghetti sauce and cayenne. Reduce to a simmer and cook for 10-15 minutes, until sauce has thickened. Serve over pasta.

4. Eat and enjoy!
